One Day Down!

Goodbye, winter break! Hello, second semester!

I’d say today wasn’t bad at all, as far as going back to school goes. I got the remainder of my exam scores, and I’m happy with ’em, and it was a pretty easy day. Unfortunately, I’ve been quite nauseous all day today, so the food level has been kinda low. Same as yesterday. Ugh.

Breakfast = usual.

I followed this with a serving of Fiber One cereal, as I tend to do. 🙂

My lunch was quite easy to throw together!

I had some thick cucumber slices, 3 oz. of baby carrots, a Braeburn apple, a few tablespoons of Sabra Supremely Spicy hummus, and an Aunt Millie’s multi-whole grain English muffin.

It was a rather uneventful day for me, but not for Pippa. She was alone for the better part of today, with the rest of us going back to work and school. After two weeks of ceaseless attention, that must have been a rude awakening for her. She handled it just fine though. When we arrived home, she was wild-eyed and rambunctious – ready for a walk!

My mom walked her, and I had a bowl of Quaker Apples & Cinnamon oatmeal… that I forgot to photograph. It was just what I needed after the sudden cold and snow that’s swept over the city. Ick. It was around 50 degrees in the last week of December! Unheard of in my world!

I worked on my pre-calc homework and snuggled with my puppy before helping my mom with dinner.

Tonight, a recipe from Picky Palate was on the menu.

We had the BBQ Chicken Pizza Soup and it was delicious! We added a little extra chicken to make it even heartier. My picture is a bit blurry and totally doesn’t do the soup justice.

Good food, bad picture 🙂

I haven’t mastered the art of photographing soup… tips?

Still feeling pretty nauseous, I had some Fiber One cereal and a smoothie in a bowl for a snack.

In the mix:

  • 1 c. unsweetened almond milk
  • 1 t. xanthan gum
  • 1/2 c. Fage plain Greek yogurt
  • 1 frozen banana
  • 1 c. blackberries
  • 1 c. frozen raspberries
  • a little crushed ice
  • 1 T. chia seeds

The smoothie wasn’t bad, but it was a little thin and lacked a little flavor. Perhaps less liquid next time?

I am off to bed now. Hopefully, I’ll get some good rest and feel better tomorrow! Have a great night!
